I've been searching online with no avail for an answer of how to properly redeem my 12 month PS Plus Card since I want to downgrade from Premium (which I took that Playstation Deal months ago to try Premium) to Essential without accidentally redeeming it for the Premium which would convert the 12 months to whatever amount Premium will change it to.

Meh, an extra £16 for premium over extra, and for that you get some classic games and the ability to stream a large ps3 catalogue (plus everything else). Seems like a decent deal to me.

No. There are many that let their PS+ expire and renew a few months later and they get access to everything. I don't believe you can change it from a 3 month to an annual renewal (please correct if wrong). I recommend just buying 1 yr cards off Amazon/eBay or when sales occur in stores e.g. Black Friday sale $30/yr for PS+.
